Preheat oven to 350 degrees F
1 cup butter
1 cup peanut butter
1 1/2 cup packed brown sugar
2 eggs
1/2 teaspoon vanilla extract
1 cup whole wheat flour
1/2 cup WW Pastry flour
2 teaspoons baking soda
1 1/2 cup old-fashioned rolled oats
DIRECTIONS
In a medium bowl, beat butter till soft, then cream in brown sugar. Cream in peanut butter.
Add eggs and vanilla. Beat til light and airy.
Combine the flour and baking soda, stir into the creamed mixture. Stir in the rolled oats.
Drop by rounded tablespoonfuls onto an ungreased cookie sheet.
Bake for ~14 minutes until golden brown. Remove from the baking sheet to cool on wire racks. Store in an airtight container when cool.
